We’ve all been hit hard by a pizza craving when we’re doing our best to eat well and stay fit. Well, now there’s a guilt-free and gluten free way to indulge! It’s cauliflower pizza crust – and trust us, it’s better than it sounds.
Creating a cauliflower pizza crust is like giving yourself a super-dose of vegetables and vitamins, discreetly hidden underneath a bed of marinara sauce and cheese.

Plus, it’s a good source of fibre, protein, and other healthy vitamins.
This pizza crust is easy to make at home, and you can top your pizza with whatever floats your boat – from veggies to a protein boost of meat, and from mozzarella to goat cheese. To make life even easier, we like topping ours with leftovers. Last night’s chicken breast can become a chicken Hawaiian pizza with some pineapple, or the roasted veggies you didn’t finish for lunch are now a mediterranean pizza with a handful of spinach. You’ll need:
- 2 cups grated cauliflower (about 1/2 head)
- 1/2 cup yogurt
- 1 egg
- 1 teaspoon Italian seasoning (or your favourite spices)
- Sea salt
- Your favourite toppings
Preheat oven to 400 degrees.
Grate your cauliflower (you can use a cheese grater, or a food processor or blender). Place grated cauliflower on a clean dish towel, then wrap and squeeze out all moisture. Now transfer your dry cauliflower to a bowl and add yogurt, eggs, and spices. Fold mixture until evenly combined.
Place dough onto a baking sheet lined with parchment paper and spread mixture with your hands until the crust is about 3/4-inch thick. Bake for 30 minutes, or until lightly browned and firm enough to hold its shape.
Remove from the oven, and apply the sauce and toppings of your choice.
