An active lifestyle is the best way to keep your ticker running like clockwork, but you can also nourish your heart with delicious food! Salmon and walnuts are filled with healthy fats and Omega-3’s – essential for cardiovascular health. Here’s an easy dinner that you can have ready in just 20 minutes. It’s great paired with some brown rice or roasted veggies, or on top of your favourite salad.
Ingredients
- 2 3oz salmon filets
- 2 tablespoons lemon juice
- 1½ teaspoons grated lemon rind
- dash of salt and pepper
- 2 tablespoons olive oil
- ¼ cup finely chopped walnuts
- 2 tablespoons breadcrumbs
Instructions
Preheat oven to 425 F. Place salmon in a baking pan and drizzle with lemon juice.
In a bowl, mix lemon peel, breadcrumbs, walnuts salt and pepper. Add olive oil, and stir until combined.
Spread about 2 tablespoons of walnut topping onto one side of the salmon filets. Bake 15 minutes, or until salmon flakes with a fork and crumbs are golden.
