Recipe: Breakfast Egg Muffins

Enjoy this easy breakfast that you can store in the fridge all week – making it the perfect packed breakfast to take to work, the gym, school, and everywhere in between.

Ingredients:
  • cooking spray
  • 4 cups egg whites
  • 9 eggs
  • 1 cup diced meat (of your choice)
  • 2 cups chopped spinach
  • 2 red bell peppers, diced
  • 2 green bell peppers, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon cayenne pepper
  • salt and black pepper to taste

Preheat oven to 375 degrees F. Spray 24 muffin cups with cooking spray.

Beat eggs in a large bowl. Add in egg whites and beat until smooth. Stir in meat, veggies, and seasoning. You can follow the recipe above, or be creative and use your own favourite veggies! We also love throwing in leftovers. Had chicken last night? Perfect. Looking for some spice? Throw in some jalapenos.

Ladle the egg mixture into prepared muffin cups to about 3/4 full.

Bake in preheated oven until firm in the middle, 25 to 30 minutes.
